Spicy mango, textured peanuts, Tetilla Cheese and rocket by Raquel Meroño
Ingredients

- 150 g Tetilla cheese
- 1 mango
- 50 g peanut butter
- 50 g peeled peanuts
- Arugula
- Salt flakes
- Sriracha sauce
Preparation
- Peel the mango and cut into small cubes.
- Cut the Tetilla cheese into cubes similar in size to the mango.
- Place the peeled peanuts on a chopping board and chop half of them coarsely, leaving the other half whole.
Finishing and presentation
- Lay a bed of rocket.
- Distribute the mango and tetilla cheese cubes over the rocket.
- Add the peanut butter in small spoonfuls around the plate.
- Sprinkle the chopped whole peanuts over the mango, cheese and rocket.
- Sprinkle with sriracha to taste for a spicy touch.
- Finish by sprinkling a little salt flakes over the whole dish.
