Spicy mango, textured peanuts, Tetilla Cheese and rocket by Raquel Meroño

Ingredients

    • 150 g Tetilla cheese
    • 1 mango
    • 50 g peanut butter
    • 50 g peeled peanuts
    • Arugula
    • Salt flakes
    • Sriracha sauce

Preparation

  • Peel the mango and cut into small cubes.
  • Cut the Tetilla cheese into cubes similar in size to the mango.
  • Place the peeled peanuts on a chopping board and chop half of them coarsely, leaving the other half whole.

Finishing and presentation

  • Lay a bed of rocket.
  • Distribute the mango and tetilla cheese cubes over the rocket.
  • Add the peanut butter in small spoonfuls around the plate.
  • Sprinkle the chopped whole peanuts over the mango, cheese and rocket.
  • Sprinkle with sriracha to taste for a spicy touch.
  • Finish by sprinkling a little salt flakes over the whole dish.
