Majorero Cheese, guacamole and beetroot tartar by Fray Marcos

Ingredients

    • Majorero Cheese
    • Avocado
    • Purple onion
    • Tomato
    • Cilantro
    • Lime
    • Extra Virgin Olive Oil
    • Salt
    • Black pepper
    • Beetroot
    • Sesame oil

Preparation

For the beetroot tartar:

    • Peel the beetroot and cut into small cubes.
    • Place in a bowl and season with a dash of sesame oil, salt and black pepper to taste.
    • Mix well and set aside.

For the guacamole:

    • In a bowl, mash the avocado with a fork until desired consistency.
    • Add the finely chopped red onion, finely diced tomato, chopped cilantro, lime juice, extra virgin olive oil, salt and pepper to taste.
    • Mix all ingredients until well combined.

Finishing and presentation

  • Cut the Majorero Cheese into cubes or thin slices to assemble the dish.
  • To serve, place a portion of the beetroot tartar in the centre of the plate. Serve with portions of guacamole around it and garnish with the cubes or slices of Majorero Cheese.
  • Mix all ingredients until well combined.
