Majorero Cheese, guacamole and beetroot tartar by Fray Marcos
Ingredients

- Majorero Cheese
- Avocado
- Purple onion
- Tomato
- Cilantro
- Lime
- Extra Virgin Olive Oil
- Salt
- Black pepper
- Beetroot
- Sesame oil
Preparation
For the beetroot tartar:

- Peel the beetroot and cut into small cubes.
- Place in a bowl and season with a dash of sesame oil, salt and black pepper to taste.
- Mix well and set aside.
For the guacamole:

- In a bowl, mash the avocado with a fork until desired consistency.
- Add the finely chopped red onion, finely diced tomato, chopped cilantro, lime juice, extra virgin olive oil, salt and pepper to taste.
- Mix all ingredients until well combined.
Finishing and presentation
- Cut the Majorero Cheese into cubes or thin slices to assemble the dish.
- To serve, place a portion of the beetroot tartar in the centre of the plate. Serve with portions of guacamole around it and garnish with the cubes or slices of Majorero Cheese.
