Soft Cheeses

Soft cheeses are young cheeses, made only a few days old, which have only undergone a first fermentation, and are therefore very lactic, with hints of milk, mild yoghurt, butter and dried fruit in a milky state. They can be made with any type of milk or its mixtures and are suitable for low-calorie and low-salt diets. Their texture is soft to semi-soft and the term ‘tender’ is sometimes confused with this type of texture.
